Grilled Salmon Collars with Cauliflower Puree
Your family will love this healthy grilled soy-marinated salmon with cauliflower puree. The ingredients you will need for 4 people are:
For grilled salmon:
- 4 salmon collars with removed fins
- piece of ginger, peeled, thinly sliced
- fresh red chile, chopped
- 2 garlic cloves, smashed
- vegetable oil (for grilling)
- salt
- 1 cup of rice wine
- 1/4 cup of sake
- 1/2 teaspoon of sugar
- 1/2 cup of soy sauce
For cauliflower puree:
- 1 cauliflower
- 1 sweet potato
- salt and pepper
- 2 teaspoons of butter
Add ginger, rice wine, soy sauce, sugar, chile, sake, and 1 cup of water to a pot. Heat the mixture and let it simmer. You can stir it from time to time. After 15 to 20 mins, let it cool down. Strain the mixture to discard the solids. Add the sauce into a bowl, place your salmon collars in it, and let them marinate for 30 minutes.
Meanwhile, let’s prepare the other part of this family dinner recipe. Steam the cauliflower and boil peeled sweet potato until they are both soft. Put cauliflower, sweet potato, butter, salt, and pepper in a bowl and mash it till smooth consistency. Prepare your salmon for the next step. Take it out of the bowl and wipe the excessive sauce from it.
Once that is done, you need to prepare your grill. While choosing between infrared grills vs. gas grills, make sure to learn more about specific techniques essential for preparing delicious meals by using this form of cooking. Turn on your grill to medium heat and place your salmon on the cooking grate. Turn salmon every 3-5 mins for a nice crisp and juiciness. Lastly, transfer your salmon collars to a platter and pair it with cauliflower puree.
